Trail Mix Cookies

Ingredients:

  • ½ cup applesauce
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 ½ teaspoons vanilla extract
  • 2 egg whites
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • 1 ¼ cups quick cooking oats
  • ½ cup white chocolate chips
  • ½ cup chopped pecans
  • ⅓ cup dried cranberries

Kitchen tools:

  • Measuring cups and spoons
  • 3 mixing bowls (2 medium, 1 small)
  • Handheld mixer
  • Whisk
  • Spatula
  • Cookie sheets
  • Parchment paper
  • Wire cooling racks

Directions:

  • Turn your oven on and preheat to 350 degrees. Place parchment paper on the cookie sheets.
  • Beat together applesauce, both sugars, and vanilla in a medium bowl and set aside.
  • Next, place the egg whites in the small bowl and use the handheld mixer to beat them until frothy. Combine the egg whites with the applesauce mixture.
  • Whisk the dry flour, baking soda, salt, and cinnamon together in a third bowl, and then gently stir these dry ingredients into the egg mixture, stirring until just combined.
  • Stir in the oats, white chocolate chips, pecans, and dried cranberries. Mix until well incorporated. Drop by large tablespoons onto the cookie sheets.
  • Bake 9-10 minutes or until golden brown and cool on wire racks. Enjoy!

Modifications:

  • If dried cranberries aren’t your fave, you can substitute other dried fruits like raisins or coarsely chopped dates or apricots. You can also swap out the pecans for a different nut or semi-sweet chocolate chips for the white.  
  • One easy way to save on dirtying up extra utensils is to premeasure and combine ingredient groups into food storage bags. Premix your flour mixture in one bag and the chocolate, nuts, and fruit in another. Then, on baking day, simply combine your ingredients when ready.
