Lemon Lime Grilled Pike

Lemon-Lime Grilled Pike

Ingredients:

  • Several pike fillets, cleaned and prepared for grilling*
  • 3 lemons, thinly sliced into rounds
  • 2 limes, thinly sliced into rounds
  • 1 stick of butter, divided into thin pats (you may need additional butter)
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup garlic paste

*Other fish that work well with this recipe: flounder, rockfish, salmon, and red snapper.

Directions:

  • Clean the fish. To prepare for grilling, slice each fillet down the middle.
  • Combine salt, pepper, and garlic paste in a small bowl, adjusting measurements to taste if desired.
  • Spread a thin layer of seasoned paste down the middle of each fillet, rubbing into the fish, and add a small pat of butter to each piece.
  • Alternate slices of lemons and limes and remaining butter pats on the outside of each fillet.
  • Grill over an open flame, your RV’s outdoor kitchen cooktop, turning occasionally. Grill until the fish flakes and the skin is crispy, approximately 10 minutes per inch of thickness.

This camping recipe will become a fast favorite because the ingredients don’t take up much space in your RV’s pantry, assembly is quick and easy, and clean up is a snap. Say goodbye to labor-intensive recipes that require hundreds of dirty dishes and random seasonings and spices. Keep it simple. Keep it delicious!

If you don’t grill this directly over an open flame, we highly recommend cooking it on the outdoor cooktop of your new or used RV. While perfectly-grilled fish tastes delicious, sometimes the actual cooking doesn’t smell the best, and this allows any lingering smells to dissipate straight into the open air instead of hanging around.
